Strathmill 28 Year Old (1996) - finished for 3 years in a fresh Oloroso Sherry hogshead - from single cask #2053.  Non chill filtered and natural colour, bottled at cask strength (55.3% ABV) yielding only 132 bottles.

NOSE
Fresh and finely tuned from the outset. Initial notes of cut hay and lemon peel drift into orchard skins — apple, pear, a whisper of apricot — backed by soft vanilla and digestive biscuit. A trace of floral honey emerges, supported by hints of dried meadow flowers and light malt. There's a subtle linen-clean character that suggests a careful, spirit-forward maturation. With time, citrus oils rise, bringing clarity and a faint note of underripe banana or melon skin — a gentle green lift that balances the sweetness.

TASTE
Clean, crisp, and purposeful. Opens with classic Speyside clarity — orchard fruit, barley sugar, and lemon barley water — then deepens into layers of creamy cereal and chamomile tea. The natural strength gives it lift, but nothing spikes or jars. Mid-palate introduces a mild waxy note, some white pepper heat, and toasted oat, with a slow reveal of almond and lemon peel. The sweetness is measured and well-contained — never sticky, always in service to the structure.

FINISH
Dry, linear, and impressively clean. Soft oak tannins gradually emerge, along with barley husk, citrus pith, and the light chalky minerality of good refill wood. The finish holds steady, fading gently with a flicker of wax and white pepper. No fire. No cloy. Just a clear, well-aged echo.
